OCR: VEGETABLE GARDEN In 1807 Jefferson began improving the site of an carlier vegetable garden by forming a 1000-foot-long plateau retained by a massive stone wall. By 1812 he had divided the garden into"squares" bordered by walkways and organized according to what parts of the plants were harvested-roots, fruits, or leaves. The garden provided for the family table and served as a testing ground for over 250 vegetable varieties. Today the vegetables are distributed to Monticello employees.
